Slow roasted apple crust with pecan, vanilla ice-cream and palmier

INGREDIENTS


- Vanilla ice-cream 
- 2 winesap apple s
- 2 honeycrisp apple s
- 2 macoun apple s
- 2 granny smith apple s
- 3/4 cup of sugar
- 1/2 tsp of salt
- 1/8 tsp of cloves
- 3 tbs of flour
- 1 tsp of cinnamon
- 1/8 tsp of nutmeg
Crust :
- 1/2 cup of light brown sugar
- 1/2 cup of flour
- 1/2 cup of roasted pecan 
- 4 oz of butter
- 1 tsp of cinnamon
- 1/4 tsp of salt
Palmier :
- Puff pastry sheet
- Sugar
- Egg

LA RECETTE DU CHEF

Peel and cut all the apple s. Add the sugar, the salt, the cloves, the flour, the cinnamon and the grated nutmeg. Mix and cook into the oven at 275 C° for 1 hour and a half.

Mix all the ingredients from the crust by the hand. Cook it the oven à 325 F° until it's golden.

Cut bands in the puff pastry sheet, display some egg on it and after the sugar. Form the palmier and cook them in the oven at 350 F°.

Dress the apple s first in the plate, then the crust, after 1 scoop of ice-cream and finish with thepalmier .
